Tuesday is Taco Night

Make your Tuesday night a taco night! Hell make any night a taco night. To be honest I made these on Sunday, after having some fish tacos a few days earlier. They sure hit the spot, but everybody is doing fish tacos at the moment with the same old fish, be it red snapper or sea bass. There are plenty other sea meats to choose from and I went for the delectable soft succulent scallops covered in a dark beer batter.  A fluffy crunch and a pillowy bite of sea.  These fabulous fried items were carried on fresh made corn tortillas and sat on a bed of shredded cabbage, marinated in lime juice with a chili pepper grind; the tang from sliced red onions and the cooling crema laced with smooth smokey chipotle helped round off the edges. Add two parts diced tomatoes and a sprinkling of the most herbal of coriander and you are in a business.

Have a night, have a taco night—“G.N.”
